I'm tellin' you, man. I just made this big pot of bean soup, and you know I totally could have gone down the vegan route and made it all with just the beans and barley and veg and veg stock. And it would have been fine. But this morning at the deli counter, they've got a bowl where they put all the 'end cuts', and there was this big ol' chunk of fatty ham rind sitting there, and I just knew if I chucked that into the pot and let it simmer in there for a couple of hours, it would just really, really make it.
This is damn good soup. Without the pork, it would have just been good soup. See?
