Chipotle Aioli
I perfected this over the summer,my pops makes it sans blender or mixer but with a mortar and pestil,time consuming but even better...
Stuff you'll need:
1 can chipotle peppers in adobo sauce
4 cloves garlic cloves,minced
1 egg yolk at room temperature
1 tbsp fresh squeezed lemon juice
pinch of salt
pinch of pepper
1 cup olive oil
Method:
In a blender, puree the chipotles with the adobo sauce they are stored in...add the garlic,egg yolk,and lemon juice,and salt to a blender or mixer and puree until smooth...slowly drizzle in oil with the motor running and puree until aioli thickens...it's amazing use it on sangy's, or with fries (patatas fritas), or anywhere else mayo is used...but the best way to use it is on the patatas fritas or on flat salt bread with fresh fried strips of anchoive...
