I sort of had the same thing yesterday.

I slowly cook down sliced onions, garlic, red pepper, eggplant, s&p, and hot pepper in a generous douse of olive oil for a good hour+ and add some fresh basil near the end.

Then I slap it on some bread with mozza or provolone on top.

My husband's grandma usually adds a nice slab of pounded/breaded/fried veal cutlet :eek:

It's even better as a cold sangwich topping the next day!

The wife and I went to a new place on the beach. For a beach suburb its a very.. how you say... 'lower socio economic area'. But the beach is spectacular. I'm sure before too long the property investors will move in and move all the poor unemployed people out... but I digress.

We had smoked chicken and pork belly sliders, a beef rib slider, seared scallops with crispy smoked bacon, a fish & chip spring roll and some glazed duck crepes. Oh and a chocolate taco for dessert.
