Today's idea courtesy of the extra apples and little red potatoes that we had lying around...

Use 2 apples, peel and cut them, and make applesauce (put apples in blender with like 3 tablespoons of water).

dice up half an onion into little pieces. put in applesauce.

sprinkle in garlic powder or garlic salt in applesauce. spread the sauce on an oven safe glass thing.

put salt and pepper on pork chops, and then place chops on the glass thing on top of the sauce.

cut the little red potatoes in half and fill the rest of the glass thing with little red potatoes. i used about 12 of them.

use your very clean hands to spread the applesauce on everything. use some thyme and sprinkle on top on the chops and the potatoes.

cover with aluminum foil and bake at 350F for about an hour.

feed to your local friendly meat eaters. the response i got was that it was good, the chops were nice and moist and the apple-y potatoes tasted very good with a little sprinkling of salt.

wow...I haven't had that dish in probably 20 years...nice memory's of my irish side...granny used to do something similar with lamb as well...(y)
