Camo's 'gift' thread inspired this, but I'm making this separate so as not to muddle his up. I'm asking mr.p for two things this Christmas - not that I expect both, but so that he can choose between them and surprise me at least a little bit.
One is a sewing machine, and I've already done a bit of research on makes and models to suggest, so we're good there.
But the other thing is, right now we've only got one of those cheap-ish knife block sets, and they're not in great shape, so I'm thinking we invest in some good quality kitchen knives. Not a massive set, just a few well-chosen ones. But I am out of my depth on this one - I don't know what are good, reputable brands to tell him to look for. Any suggestions?

I'm just gonna sit here and listen.
I am so frugal I've been sharpening the same cheapo knives for 12 years!
Still razor sharp!

Last year my dad bought me a Hiromoto super fine Japanese steel… (http://i183.photobucket.com/albums/x265/mcmoot/Hiromoto.jpg)it was $300 plus after shipping but it’s a life long investment…if you were looking for a block of knives I would primarily suggest something from Henckel ( http://www.jahenckels.com/)
and check the Miyabi line as well…and think long term...(y)

Those are good suggestions, thanks guys. I don't think I need a block, tbh - we've got a bread knife we barely use, and a halfway decent one for carving the occasional roast. So really I'm just looking to invest in the two I use most often, a basic cook's knife and a paring knife.

maybe with those i could finally figure out how to cut a tomato without it splooshing everywhere!
We have Cutco knives. Never had to sharpen them and have had them for over 3 years and they are still sharp. kind of expensive but if you like to cook then i think they are worth it.
When i worked with food the cook swore by them too.

For very good knives w/o braking the bank I suggest Wusthof Classic http://www.wusthof.com/en/classic.asp . These are the knives I use. They have more weight and balance to them then the lower tier knives (JA Henkel). They are much easier to handle as well as maintain. Buy yourself a good knife block and oil to keep fresh.
You should make sure that you get at least a
1. 3 1/2 or 4" pearing knife
2. 5 1/2" serrated knife
3. 5" boning knife
4. 12" Chef or Cook's knife
5. 9" Bread KNife

yeah, I actually tried to sell them, lasted about 1 month 1/2, but I still have the knives. Moved to France, and my mother-in-law kept the carver (think its the carver) she liked it so much. The scissors are fucking solid too. good luck with the gifts!
