For some reason I don’t due this as much as I should, maybe 3 – 4 time a year…but it’s so fantastic…I did a batch (10pc) this past weekend stuffed with genuine home made, hand tubed Ital sausage, mushrooms, mozza, parmesan and home made tomato marinara…I’ll ring my own bell and say you’d be knocked out…there’s of course lots of way to stuff them I also like a spinach and chicken stuffing with a white sauce or bechamel in general....anyway’s just a reminder to visit the delicious world of the manicotti soon…anyone have a stuffing they recommend?

P.S: I don’t call them cannelloni because when I think cannelloni I think amazing pastry…

read what you post, emeril

"Cannelloni is often confused with manicotti, the major difference being that manicotti are preshaped tubes"

oh gawd,please...Emeril?...I've never blackened anything I cook on purpose...that does it!...

Cannelloni usually refers to rectangular pasta sheets that are rolled with a filling. However, sometimes the pasta dough is replaced with a cooked crêpe, generally 8-10 cm (3-4 inches) in length and once rolled, 2 cm (1 inch) in diameter.

Personally,I think that scene in Ghost with the clay wheel would have been much more romantic if they'd have been stuffing sausage gut...(y)
