View Full Version : BBQ Pepper Pork Satay with Peanut Dipping Sauce...

1 pork tenderloin: Cut tenderloin in half crosswise,then cut the halves lengthwise into 1/2 inch strips. (should give you 8 or 10 pieces)

Marinade:

1/2 cup soy sauce
1 tblsp minced ginger
2 tblsp coarse ground black pepper
1 tblsp dried green peppercorns (crushed)
1/4 cup rice vinegar
2 tblsp veg oil

Whisk ingredients of marinade together add the pork strips,turn,coat evenly. Let sit in the fridge for at least an hour. Soak your wood skewers,weave pork onto them. BBQ for about 3 minutes a side on hot,hot heat.

Serve with the peanut sauce below for dipping and rice noodles on a bed of pan seared bok choy.

Peanut Dipping Sauce:

1/4 cup creamy peanut butter
1/4 cup water
2 tsp minced ginger
1 tblsp soy sauce
1 tblsp rice vinegar
1 tblsp chopped cilantro (optional,I hate cilantro!)
