for many years it was the ham and cheese (preferably cheddar) but now I'm more inclined to spinach, mushrooms, cheese and perhaps a dollop of sour cream on top so i know the world is right.

Not much of an omlette guy, but Heiress sounds like she's got a good one.

When I do see one a those omlette guys at the grill, I usally get ham, cheese, and tomatoes.
