Somebody tell me the best way to make your own curry sauce.

I am using chicken, and currently use paste out of a jar with a million random herbs and spices added in for luck. Tastes good but I would like to make my own.

How does I do that?



Also, tell me about you and curry. What's the best curry? I think Chicken Tikka Masala.

You know something, you'd be suprised at how many people have scoffed at me for wondering how to make a curry from scratch. I've only really bothered to use sauce from a jar.

I think my fave would be a Chicken Korma.

i do like you though, jars + my own spices and extras. i like to add potato and sweet potato. and (may sound funny) with the beef, sometimes it is nice to add some chopped apple pieces - not many (omit sweet potato).
occasionally stir in a coconut milk can if i want it really rich.

Yeah, I put in coconut milk to thicken it up sometimes, and once I think I put in strawberry yoghurt because I couldn't find any plain.

EDIT: You know what? I am going to put some god damned apple pieces in next time. I love apple.

That's a good idea. I would probably eat them all before I added them though.

I put in cajun spices the other night, but it didn't work well.

Where are all the master Indian chefs from the UK to tell me how to make a proper curry?

I usually eat a load too. Don't forget to buy the unsalted ones.

I live near Bradford, one of the nations curry capitols. The quandary is do you make your own or do you just eat out at a quality curry house?
