I just made this fabulous pumpkin lasagna. Puts a bit of a sweetness to an old time favorite.

i was out to lunch last week and i ordered the "great pumpkin pizza"
i don't have the exact recipe but it was basically a light punkpin puree for the sauce and it had blue cheese and i think it was basil on top. quite delicious

that sounds fabulous! There is a pizza place here in Boston that has a pizza with butternut squash sauce, 4 cheeses, goat cheese, braised leeks and fried sage leaves. YUM!

I once made a pumpkin cheesecake with a ground nut crust. it was heavenly! Probably going to attempt it again this Christmas.
There are lots of recipe variations on the net, can't remember which once I actually used.

you have to make these and then eat them. NOW.
PUMPKIN PANCAKES
2 c. Bisquick mix
2 tbsp. brown sugar (light)
2 tsp. cinnamon
1 1/2 c. canned milk
1 tsp. allspice
1/2 c. pumpkin
2 tbsp. vegetable oil
2 eggs
1 tsp. vanilla
Bake on hot griddle until browned
add powdered sugar and whip cream topping. DEVOUR!
I was going to try my hand at making this Pumpkin, coconut and lemongrass (http://programmes.stv.tv/the-hour/news-gossip/133046-pumpkin-coconut-and-lemongrass-soup/) soup just because I had carved a pumpkin for the first time. But the stuff that came out was not nearly enough. So I never.

This sounds absolutely wonderful. I had pumpkin pancakes a few weeks ago at a restaurant and they were super yummy. Must try these!
