I made this up at my last job so I would always have emergency chicken breasts in the freezer in case the lunch provided that day was unhealthy.
Toss a chicken breast in a freezer bag.
Add enough apple cider to cover
Sprinkle in about a teaspoon of thyme
Store overnight in fridge (or freezer)
Take breast out of baggie. Microwave thawed chicken breast on a covered plate for about six or seven minutes, turning it over halfway through
Eat
Seriously juicy and good.
Microwaving works better than a grill because the sugar tends to burn on the grill. I never tried baking it.
Apple cider works better than apple juice. And when you've taken the chicken breast out of the bag, you can just throw another breast in there and use the mixture again.
Anyway, yeah. Super duper easy. I used to have half a dozen or so chicken breasts in the freezer at a time and shared with co-workers. Everybody was surprised at how good it was.
