I think my fave way is to boil then flower them out and dip the ends in a simple real mayonaise with dill and a bit of balsamic...but deep frying the whole heart sounds pretty damned good...yes...artichokes...don't ignore them...

most common usage is in a red sauce, but i really like them so other ideas would be great

boil the artichoke. dip the leaves in a little melted butter with some lemon juice. the heart is my favorite part just solid meat...mmmmm i want some right now
