This recipe is from one of my favorite cookbooks called Silver Palate. The only thing I changed is instead of doing the sausage, eggplant and peppers in a pan I did them on the grill.
I took a large round loaf and sliced it into 4 layers. Here is how it went down...
Bottom layer of bread
grilled peppers lightly coated with a vinaigrette
grilled sausage
fresh parsley
dried oregano
2nd layer of bread
drizzle of olive oil
homemade garlic anchovy mayo
prosciutto
tomatoes
gouda cheese
2 bunches of arugula
fresh parsley
dried oregano
salt
pepper
3rd slice of bread
ricotta cheese mixed with parmigiano-reggiano cheese, salt, pepper, and parsley
grilled eggplant marinated in a vinaigrette
top slice of bread
Then I wraped the sandwich and set it in a pan and placed a cast iron pan on top to weight it down and let it sit over night. See pics

It weighed 7.25 lbs

Do not attempt to eat this sandwich without red wine. I had an Aussie Red. Sooo Good
