2 lbs Salmon
equal parts salt and sugar
fresh ground black pepper
2 bunches of dill washed and chopped a few times

Cover the salmon with these ingredient and wrap the fish with plastic wrap. Weigh the wrapped fish down with a heavy item and let sit in the refrigerator for 72 hours.

Once I unwrapped the salmon I rinsed it off and dried it with paper towel. I was really happy with the results.

Does this end up as some sort of sushi, or are you going to grill this fish?

No. Its not cooked at all. It's salt cured. I slice it thin and eat it. The last picture is it on a toasted bagel with cream cheese and capers

A woman I worked with used to do this every year at xmas and bring some in for us, I have yet to try it myself.

IWANNAMAKEITSOBAD. Especially now that I live out east and have easy access to fresh Montreal style bagels (fuck the NY variety, sorry!)
