It really wouldn't. If the escalators weren't there and it was steps then you wouldn't need all the barriers either side of the escalators making more room to get up the stairs. Covent Garden is a bad example because it was made in the dark ages and todays capacity isn't catered for. However, Canada Water for example have some larger steps that aren't ever over crowded, if they still had a system where the lazy fudgers go on the right then the people who wanted to get a move on can still overtake.
It'll never happen with the TFL but the fancy new buildings should cut out a lot of the escalators, bring back the steps and doors. Lifts for the lazy and hard of mobility and I think the side effect will be mainly positive.
