- Cut up and cook 3 pieces of bacon in a large pot
- Remove and set aside
- Saute 1 large onion and 2 stalks of celery until soft
- Add in some paprika, cumen, salt and pepper
- Throw in 1 diced jalapeno and 3 cloves of chopped garlic
- Skin and dice up 2 large potatoes into small chunks and add this to the mix
- Add a bunch of frozen corn (just eyeball it so it looks like an equal amount to the potatoes)
- Saute up for a bit until the taters/corn starts to soften
- Add enough chicken stock to cover the mix (I just use organic cubes of stock and then I don't have to measure the water)
- throw in 2-3 bay leaves
- Bring to a boil, turn down the heat and then simmer for about 15-20 minutes (until everything is cooked through)
- remove the bay leaves
- Pull off heat and zip a few times with a hand blender (I like to leave it chunky)
- Add in a slop of cream and mix
- Serve in a bowl with some of the bacon on top, a squeeze of lime/lemon and its also super tasty if you add a dollop of sour cream
Hell I even grate some cheese on top sometimes too
Oh, I didn't have any, but some cilantro thrown in at the end would probably be good too
