SO I typical make about two ponds of ground beef or turkey and go from there .. I always use tomatoes, put I have been using less tomatoes and substituting a few things....
one is use Rotel instead of tomatoes AND/0R try using a good red enchilada sauce instead of tomatoes AND/OR use red chili pure instead of tomatoes ... prefer Hatch Red Chili finely use tomato past so you can use beer to thin it out for beer chili. I never make the same chili twice so I cant share my actual recipe. I did take 3rd in this years NM chili cook off... used the red chili pure and enchilada sauce in that one. About 14 oz red chili, 14 oz enchilada sauce and 14 oz of roasted tomatoes...

I like to caramelize the onions before simmering them in a slow cooker with the rest of the ingredients.

What are general ingredients to kick off a traditional chilli recipe? I've always wondered, I feel being in the middle of a Canadian winter I could really bust out a mean mothafuckin chilli.
