Dope Quesadilla Recipe (easy and delicious)

Quesadilla

1 to 2 teaspoons cooking oil
2 flour tortillas (6 inches)
1/2 cup shredded cheddar cheese, divided
1/2 cup cubed cooked chicken,pork or beef
1/4 cup sliced fresh mushrooms
1/2 cup shredded Monterey Jack cheese, divided
* * * Don't forget the jalapenos for real! * * *
Sour cream and salsa, optional


Heat oil in a nonstick skillet, add one tortilla, layer with half the cheddar cheese, and the chicken and mushrooms, and half the Monterey Jack cheese.

Top with the second tortilla. Cover and heat until the cheese melts and bottom torilla is crisp and golden brown. Turn over, sprinkle remaining cheese on top

Cook until the tortilla is crisp and golden brown and cheese is melted.

Cut into wedges.serve with sour cream and salsa if desired.

Put on Butch Cassidy and the Sundance Kid and enjoy!

I like to prepare my filling in a pan and cook it prior

heat oil, added 4 cloves of garlic, onion cayenne, red chili flakes, salt pepper

cook up chicken chunks, remove from pan

heat up more oil, onion, garlic, chili and cayenne

add red/green peppers, olives, and tomatoes to pan

cook thoroughly

add green onion near the end

put chicken back in

add a glump of thick salsa to the pan and heat through

put tortilla on grill
crisp up
remove

put another tortilla shell on grill
add shitload of filling
add cheese on top
put already browned tortilla on top
throw sprinkly of water on grill top and put heavy pan lid over top to keep in steam from water so it will melt the cheese

AND SERVE WITH FRESH GUAC, SALSA AND SOUR CHEESE
