for the lovely miss Pauli :)
chocolate cheesecake:
3 cups medium tofu
1 cup margarine, melted
1-1 1/2 cups dry sweetenere
3/4 cup cocoa powder
2 tsp vanilla extract
1/4 tsp salt
1/2 cup soy milk
1 graham cracker pie crust (there's also a recipe for that if anyone needs it)
in a blender or food processor, blend all the ingredients till smooth. pour into a cheesecake pan lined with graham cracker crust and chill for at least 12 hours before eating.
pineapple variation:
2 1/2 cups silken tofu
2 cups medium tofu
lemon zest from one lemon
1 1/2 tsp lemon juice
1/2 cup corn syrup
1/2 cup dry sweetener
2 tbsp oil
2 1/2 tsp vanilla extract
dash of salt
1 cup pineapple, finely chopped
1 graham cracker pie crust
preheat oven to 325 F. in a blender or food processor, blend the tofus, lemon zest, lemon juice, corn syrup, sweetener, oil, vanilla, and salt until very smooth. stir in the pineapple and pour into cheesecake pan that has been lined with a graham cracker crust. bake for 45-60 minutes until center is well-set and a knife inserted into the center comes out clean. serve chilled.
:D i'll have to try these!

also: mori-nu silken tofu makes these super easy Tofu Mates packets that you just mix with the silken tofu and add water...to make pudding. either chocolate or vanilla. the chocolate one makes a great chocolate pudding pie...the vanilla one is only good if you add bananas :)
