what sort of cheese do you use? ive yet to find a really good vegan cheese. most of the ones ive tried have made me want to... not eat it.

follow your heart vegan gourmet (http://shop1.laservers.com/graphics/00000016/Nacho-full.jpg) is about the only one i use, really. it melts to a nice consistency and makes great enchiladas, quesadillas, nacho sauce, grilled cheeses - i even make a super easy mac and cheese with it (slice it thin and melt it with soymilk, vegan margarine, and vegetable broth). the mozzarella makes bitchin' pizza, too. the only problem with it is it melts only at a very high temp...at least 450 F. which means that if you're making a pizza, you either have to let all your other ingredients get a bit blackened, or microwave it afterward (which leads to soggy dough and a too-runny consistency that always burns the roof of my mouth because i don't wait for it to cool :o).
i've used Soymage's vegan cheese before, but i recall it not melting too well or tasting all that fantastic. the slices are decent in sandwiches. their vegan parmesan shake is nice too, but it doesn't have a very long shelf life.
i used to love Tofutti's american slices before i found out there's partially hydrogenated soybean oil in 'em. don't use that anymore.
to be honest, i rarely use vegan cheese anymore. i did a lot in the beginning, but now i'm so used to living without it, i just don't really crave it anymore (i know, that sounds impossible). i highly recommend nutritional yeast-based dishes. it gives everything a really yummy cheddary flavor, with tons of B12. this (http://vegweb.com/index.php?PHPSESSID=c533fe281c0570a3933fd221afb6cb b1&topic=8295.0) is my favorite vegan mac n cheese recipe besides my vegan gourmet one...i rarely make that anymore, though, because this one's soooo good. even steger begs me to make it.

anyways. thanks. ive only seen the toffutti and some other brands that tend to use casein. this is really the only thing that i havent been able to find in the area... i need more vegan stores.

most bigger health food stores (whole foods/wild oats) carry the FYH. it's the same brand that makes Vegenaise. but yeah, most soy cheeses have casien...only a few are really vegan.

they should really make that. not as a vegan product for cosmo, but cool cheee with the universeon the packet. and its in the shape of a planet.

Although if you get the right stuff, there's really no discernable difference. Not that I can detect anyway. Get the bad stuff and blech.
