hello all.

i had to post this. us stewarts/days have, through the ages, been absolutely useless at anything meringue based. we totally suck. my mum is the greatest cook but she didn't manage to break the generational curse. it brings much lolz whenever we try to make it once a year and then fail.

anyway, today my flatmate decided to have a really early christmas dinner (hmm, don't ask) so i made a chocolate raspberry pavlova for everyone HOOOH BOY HERE IT IIIIIIISSS! my wrist hurts from whisking, but it was successful. i took some pictures for prosperity and to send to me mammy ; ) i've never had this much fun, uh, grating dark chocolate before.

p.s while i was searching for a thread to put this in (keyword: CAKE) i found this fantastic thread of cosmo's (http://www.beastieboys.com/bbs/showthread.php?t=38869) back in the day which deserves looking at for the awesome photographs. thought the general cooking thread was the best place for this to live, but anyway : )

i returned to that kinky bitch nigella tonight. her pavlova (as documented above) i've done quite a few times and dammmnn, it's good.

today i did her chocolate cherry cupcakes. they're not cupcakes as the americans know them, sorry. not all plump and gorgeous and cute. but damn they are tasty. i added a whole jar of cherry jam in there. yes, cherry jam. mmmm. i'm on a diet right now so i am currently baking for everyone at work, home, strangers, whoever. baking baking baking when i secretly want to eat them all. goddammit.

the finished result. they didn't rise as much as i wanted, hrrmph. but i guess that allowed me to put the icing on and to make a nice, level surface. they are chocolatey and cherry, er.. y and taste much better than they look. nom. i don't have a muffin tray so i just had to do some in ramekins and others in about 7 muffin cases to support them. i was meant to use natural-coloured glace cherries but morrisons isn't that classy, yo.

and yeah, i'm a sucker for punishment. it's pretty brutal, but i get a lot of pleasure from other people eating them. i'll send some to austria.

they look really unremarkable but they taste yummo. the jam is the key. i left a couple for my flatmate and his current boy. i came back home tonight and his boy wants to maybe introduce the cupcakes to his boss at the coffee shop he works in, with an eye to selling them! the girl who is doing their cupcakes at the moment has gone downhill, apparently. i am so excited! i loves baking. they just want simple, sticky sweets. no expensive decoration. that i can do. woohoo! i know one coffee shop aint exactly a business empire but i am pleased.

continuing my cooking-desserts-for-others theme...

i wanted to make something that included two of god's greatest gifts, otherwise known as chocolate and peanut butter, but i had no flour. hence this piss easy dish:

line a tray with greaseproof paper.
melt 400g of plain chocolate.
melt 400g of white chocolate. add 150g (or more if you're cheeky) of peanut butter to the white chocolate. it sort of looks like a bit of turd, but it's tasty, honest:

mix until smooth.

spoon into dish in various plain/milk blobs then run a skewer around it so it goes all marbled..

they're a definite acquired taste and if it weren't for a few beers while in China, I don't think I would ever have eaten one.

I have developed a liking to them and eat them often. I won't eat them without soy sauce and vinegar though.
