Default My Grandma's Kugel

SWEET CARROT KUGEL
6 carrots, grated
2 apples, grated
1 can pineapple bits, drained, reserve juice
1/2- 1 cup yellow raisins
1/2 cup matzo cake meal
1 cup matzo farfel, softened with a little water
2 eggs
1/3 cup oil
1/3 cup water
1/2 cup sugar
cinnamon for topping
In large bowl, combine carrots, pineapple, apple and raisins. In medium bowl, combine reserved juice, eggs, sugar, oil and water; whisk together and whisk in cake meal. Mix in farfel. Combine with fruit mix, and pour into greased 9 x 9- inch pan. Sprinkle with cinnamon. Bake 1 hour at 325 degrees Fahrenheit.

Not really my G's recipe but make one and share with the board!

I make a killer sweet potato kugel:
3 cups mashed sweet potatoes/yams
1 cup sugar
2 eggs
1 tsp. vanilla extract
1 cup milk
1 stick (1/2 cup) margarine
2/3 cup brown sugar
1/3 cup melted margarine
1/3 cup flour
1 cup chopped pecans

Mix sweet potatoes, sugar, eggs, vanilla, pareve milk, and a stick of margarine.

Put in a 9"x13" glass baking dish.

Mix brown sugar with melted margarine. Add flour and pecans. Sprinkle on top of kugel.

Bake at 350°F for 30 minutes.


And here's my favorite noodle kugel:
12 oz. package egg medium noodles
1 cup cottage cheese
1/2 cup sour cream (light or regular)
4 eggs (or 2 eggs plus 4 egg whites)
1/4 cup sugar (or to taste)
1/2 cup raisins
14 oz. can crushed pineapple, well-drained
Prepare noodles according to package directions. Drain and rinse well. Return noodles to saucepan. Combine with remaining ingredients and mix well. Place in a sprayed 9"x13" glass baking dish.

Bake in a preheated 375°F oven for 45 minutes, until golden.

I am going to try the noodle kugel,I am not to fond of sweet spuds,although
I would try it once.
